Because you can add ingedients easier or just have them by themselves. I believe the eggs appreciate it, too!

I'm not a big egg eater so only order eggs when I would eat breakfast out or on a cruise, I would order an omelette. Due to Covid, I haven't eaten an egg in over a year.

I call them "over easy". I like to sop them up with my toast.

ReplyI call them over easy. I spray a little cooking oil in the pan, add the eggs and cover it. When I hear the egg start to fry, I take one teaspoon of water and pour it in the skillet, and immediately put the lid back on. Your eggs will come out perfect this way, and you will never have a broken yolk.
