Smith is a proven starter in the NFL and three-time Pro Bowler. He's taken the Chiefs to the playoffs in four out of five years he's been with the team. He may not be Tom Brady or Aaron Rodgers, but it's risky to move on from him to an unproven quarterback in Pat Mahomes.

Smith has always been a game manager incapable of winning the big game, both at Kansas City and with San Francisco before that. Mahomes may be an unknown quantity, but he has a much greater upside than Smith will ever have. Trading Smith also opens up cap space to help improve the team in other aspects of the game.
